Ka- Pow Cranberry Sauce
(This was originally made with agave, but lately I’m moving away from the agave and towards honey & maple syrup…detailed explanation to come in a future newsletter… but try what you like)
makes 2 cups
time: 25 minutes
- o 1 bag fresh organic whole cranberries (12oz)
- o 2/3 cup (agave) or try REAL maple syrup (less for more tart sauce)
- o 1/3 cup orange juice
- o 1 cinnamon stick
- o 6 black peppercorns
- o 4 whole cloves
- o 3 whole allspice o spice bag or cheesecloth
Rinse Cranberries. In a medium saucepan combine: cranberries, maple syrup, o.j, & cinnamon stick. Place peppercorns, cloves and allspice in a spice bag or a small piece of cheesecloth (tied up securely). Add to cranberry mixture. Bring all to a light boil, then reduce to a low simmer. Cook 15-20 minutes, stirring often. Mixture should be a thick syrup. Take out the spice bad & cinnamon stick. Chill and serve. (Recipe inspired by Amy Andrews)
